(Unless of course someone is allergic to sesame seeds.) 10 med. to small carrots, grated (about 5 1/2 cups when grated) 2 med. tomatoes, chopped 3/4 cup mayo (or mayo substitute) 1/4 cup toasted sesame oil 3 T diced onion 5 sprigs fresh parsley Grate carrots with either a food processor or with a cheese grater. In bowl with grated carrots, add chopped tomatoes, mayo (or mayo substitute), sesame oil, onion & fresh parsley. Mix. Ready to serve! For added color, try topping it off with - dried peas - dried cranberries For added flavor, add - pine nuts - cashews Serves about 6 Preparation time: 20 minutes (longer if you grate carrots by hand) Enjoy!
