This was pretty darned good... yield: 10 slices (10 servings) by Mark Hall Here’s a perfect snacking cake. 1 teaspoon ground cinnamon 1 teaspoon ground allspice 1/2 teaspoon freshly grated nutmeg 1/4 teaspoon ground cloves 1-1/2 cups whole wheat pastry flour 1/3 cup wheat bran 1-1/2 teaspoons baking powder 1 teaspoon baking soda 1 cup grated carrots 1 cup raisins or other dried fruit 3/4 cup honey 1-1/2 cups water Preheat the oven to 350°F. Combine all the dry ingredients and mix well. In a separate bowl combine the liquid ingredients. Fold the dry ingredients into the wet ones and mix well. Do not overbeat or mix. Pour into a nonstick 9 3 5 3 3-inch loaf pan. Bake for 1 hour and 15 minutes, or until a toothpick comes out clean. Why not honey? Some of the information there is interesting and causes me to continue questioning the use of honey in my vegan diet, but the following quotes destroys the credibility of the author, in my opinion. This way of getting a factual idea across so tinged by obvious political and cultural bias is not helpful. Too bad most causes can't have more thoughtful and reasonable spokespeople. Vegans typically don't judge species based on their intelligence. If it were ok to eat someone because he's dumb, a lot of humans would be in trouble (starting with, say, George W. Bush). A successor queen is selected by a human instead of the reigning queen--both of whom may have been " artificially inseminated" (that is, raped). These top bar hives were not very widespread. It was not until 1851 that the modern Langstroth hive was invented (where else but in America). There are lots of other links about honey that have the same information but without statements that may inflame you (even if the information is all the same). There are lots of recipes there, but not all vegan as he does use egg whites in some, but they are adaptable, if not a bit complicated in some cases. I look for more basic meals and don't try for the gourmet at every meal, like some of these doctors' "diet" plans seem to be. Who has the time or taste for that every day.
