carrot cake?

Hiya!

Does anyone have a nice recipe for carrot cake?

 

Does anyone have more suggestions of what else I can do with the

carrot mountain I'm accumulating?

Here’s a perfect snacking cake.

1 teaspoon ground cinnamon

1 teaspoon ground allspice

1/2 teaspoon freshly grated nutmeg

1/4 teaspoon ground cloves

1-1/2 cups whole wheat pastry flour

1/3 cup wheat bran

1-1/2 teaspoons baking powder

1 teaspoon baking soda

1 cup grated carrots

1 cup raisins or other dried fruit

3/4 cup honey

1-1/2 cups water

Preheat the oven to 350°F. Combine all the dry ingredients and mix well. In a separate bowl combine the liquid ingredients. Fold the dry ingredients into

the wet ones and mix well. Do not overbeat or mix. Pour into a nonstick 9 3 5 3 3-inch loaf pan. Bake for 1 hour and 15 minutes, or until a toothpick comes

out clean.

Serving size 1 slice

191 calories

0.6 grams total fat

trace saturated fat

0 milligrams cholesterol

this looks good but what can i substitute for honey? corn syrup? sugar?

I got some brown rice syrup, but have not tried it yet. I'm not sure if the substitution is one-for-one or not.

 

Why not honey? I know it's not "vegan", but I have never heard a good reason why not.

I've done one for one exchange of brown rice syrup

with honey but some people say honey is a bit sweeter

than brown rice syrup so you may want to add a bit

more.

Thank you very much for the link about honey. Some of the information there is interesting and causes me to continue questioning the use of honey in my vegan diet, but the following quotes destroys the credibility of the author, in my opinion. This way of getting a factual idea across so tinged by obvious political and cultural bias is not helpful. Too bad most causes can't have more thoughtful and reasonable spokespeople.

 

 

 

Vegans typically don't judge species based on their intelligence. If it were ok to eat someone because he's

dumb, a lot of humans would be in trouble (starting with, say, George W. Bush).

 

A successor queen is selected by a human instead of the reigning queen--both of whom may have been "

artificially inseminated"

(that is, raped).

 

These top bar hives were not very widespread. It was not until 1851 that the modern Langstroth hive was invented (where else but in America).

because it is an animal product. same reason a vegan wouldn't drink milk even if it was from ol' macdonald's farm and not a factory farm. (some may, i don't know...)

and i have heard that bees are killed in the commercial honey-gathering process. i don't have any literature around to back that up though...

brown rice syrup is nice. not super-sweet, but nice.

Any statement will inflame one person and make another

chuckle.

 

There are lots of other links about honey that have

the same information but without statements that may

inflame you (even if the information is all the same).

I would also question whether someone is actually a

vegan if they eat honey. With all the confusion over

pesco vegetarians, lacto - ovo vegetarians and vegans,

I would suggest that someone who ate honey would more

accurately be called a 'vegetarian' rather than a

vegan.

I used a loaf pan. I found this in the Dean Ornish section of webmd.com. There are lots of recipes there, but not all vegan as he does use egg whites in some, but they are adaptable, if not a bit complicated in some cases. I look for more basic meals and don't try for the gourmet at every meal, like some of these doctors' "diet" plans seem to be. Who has the time or taste for that every day. Probably why so many, including me, fall right back to junk in short order.

While I understand if you disagree with the political bent of the

article...the main points are still valid...honey is for bees like milk is

for calves.
