Guest guest Posted November 16, 2003 Report Share Posted November 16, 2003 This was a barley salad recipe I pulled off the top of my head when i had soem leftover veggies & cooked barley to use up. Megan (SOMETHING) BARLEY SALAD 2 cups cooked barley 1 medium yellow squash (zucchini-type), chopped 2 roma tomatoes, chopped 1-1/2 teaspoons sesame oil 1 tablespoon balsamic vinegar 2 t. to 1 T of Whole Foods Toronto Steak & Chicken Rub (*) Mix together cooked barley, chopped squash & tomatoes & rub seasoning in a bowl. In a small cup, whisk together sesame oil and balsamic vinegar & pour over the salad. Mix thorougly. (*) The Steak & chicken rub is a spice blend I bought at Whole Foods Market sold under their 365 store brand. I'm just experimenting with it in a seitan pastrami recipe i'm making, and thought i'd see how it went in a salad. You can approximate your own. The ingredients list in the Rub says "black pepper, (granulated) garlic, sea salt, dill (seed), coriander, and chili peppers (chili flakes most likely).
