Guest guest Posted November 23, 2003 Report Share Posted November 23, 2003 Rice Pudding Source: Taste and See Cookbook 3 cups cooked brown rice or millet 1/2 cup raisins 1/2 cup almonds 1/2 - 1 cup pineapple juice 1/4 cup coconut Blend almonds and 1/2 cup pineapple juice in blender until creamy. Add more juice, if necessary, to make cream pourable. Mix rice, raisins and almond cream in a bowl. Sprinkle top with coconut. Chill or serve immediately.
