Guest guest Posted November 23, 2003 Report Share Posted November 23, 2003 Rice Cookies Source: Taste and See Cookbook 1 cup rice flour 1/2 cup coconut 1/2 cup walnuts, chopped 2 Tbsp. honey (or alternative liquid sweetener) pinch of salt 1 cup almond meal 1 cup grated carrot 1/2 lb. tofu 1/4 cup pineapple juice To make almond meal, blend 1 cup of almonds in a dry blender. Mix rice flour, almond meal, coconut and salt in a bowl. Combine carrots and walnuts, and add to flour mixture. Blend honey (or alternative), tofu, and juice and add to dry ingredients. Mix well. Spoon by tablespoonsful onto oiled cookie sheet. Bake at 350 degrees F. for 15 - 20 minutes.
