Tempeh looks like soybeans, all pressed together into a cake, flecked with spots of black. Okay, one tablespoon of starter (from Belgium), at 28 to 40 cents per gram, is required per batch. They will, however, send a free sample. One tablespoon of cocoa (maybe about the same weight?) would 7 grams. (No, don't put cocoa in it!!) Doesn't sound cheep, unless I'm missing something here. I've ordered the free sample. The best place I know of is Gem Cultures. Their web site is at: http://www.gemcultures.com/ They're in the US (CA) so are much less expensive. If there's anything in particular you'd like to know about the tempeh-making process, just ask. I started to put together a website about it a few years ago, but let it fall by the wayside since there didn't seem to be a lot of interest in the topic. The package sez: Tempeh Starter Type B Free sample Top Cultures Doorniaan 16 2980 Zoersel Belgium info Ingredients: Tempeh (Rhizopus) moulds, rice, soy. I use tempeh often, I won first place with my Liguine And Not Clam Sauce recipe.
