Is this something one can find only at a health food store?

 

Can you find it in an oriental grocery store? Is it the same as "soy bean curd" (looks like very solid tofu)

 

Any one have any recipes for all those oriental types of tofu?

I am assuming you mean tempeh. I find it at the larger grocery stores

as well as health food stores. Some keep it near the tofu, in the

natural foods section. Another I know of keeps it in the freezer.

It freezes well and will keep a long time.

No, I don't think so. Tempeh looks like soybeans, all pressed

together into a cake, flecked with spots of black. The kind I buy is

in about a 4 " x6 " x1/2 " shrink-wrap type of package.

Tempeh looks like a bean patty...there are whole beans visible in

make tempeh? That's interesting...never even thought to do it...not sure

you can do it...since it is a fermented product...now I'm curious...off to

do some research...

Okay, one tablespoon of starter (from Belgium), at 28 to 40 cents

per gram, is required per batch. They will, however, send a free

sample. One tablespoon of cocoa (maybe about the same weight?) would

7 grams. (No, don't put cocoa in it!!)

 

Doesn't sound cheep, unless I'm missing something here. I've ordered

the free sample. Might be cheeper (but less fun) from the local

vegan store. We'll see how it works out. Tempehrarily.

I've been making tempeh since the mid '80's. The best place I know of is Gem

Cultures. Their web site is at:

They're in the US (CA) so are much less expensive.

 

If there's anything in particular you'd like to know about the tempeh-making

process, just ask. I started to put together a website about it a few years

ago, but let it fall by the wayside since there didn't seem to be a lot of

interest in the topic.

Just wanted to let you guys know that my free tempeh starter sample

arrived today. Looks like about two teaspoons worth. The package sez:

 

Tempeh Starter

Type B

Free sample

 

Top Cultures

Doorniaan 16

2980 Zoersel

Belgium

Ingredients: Tempeh (Rhizopus) moulds, rice, soy.

Directions: use i small teaspoon for 1 kg tempeh.

Store in cool and dry place.

Best before: 9/12/2004

Go to the recipe files and click on the folder substututes and then in the soy

based recipe folder there is a tempeh recipe folder. I use tempeh often, I won

first place with my Liguine And Not Clam Sauce recipe. Check those recipes out

Okay yesterday I bought a package of Tempah in a vacuum sealed pouch while at

the store, so what do I do with it?

Do I use it straight out of the package?  Do I need to soak it in something

first?

 

Also if any of you are in the DFW area our local Krogers has Morningstar on

sale for 3 for 8 dollars.
