Guest guest Posted December 30, 2003 Report Share Posted December 30, 2003 you know all about turkey leftovers. well, vegetarians can have tofurky leftovers too. and I did...in spades. lol To help use up some of what I have left over, I took: 1/2 c. cubed tofurkey roast 1-1/2 to 2 c. leftover lentil rice pilaf vegan margarine, dill weed, and garlic powder to taste. 1 roma tomato, diced The pilaf was from Xmas dinner, a mixture of 1/2 c. dry lentils cooked, 3/4 c. dry longrain rice (amounted to about a little more than 2 c. cooked rice), a few pinches of saffron, and garlic powder to taste.
