Guest guest Posted December 30, 2003 Report Share Posted December 30, 2003 jeff, i too find lunch to be a problem. i'm only a few months removed from eating crappy/yummy american food, so flavor is also a problem. here's a few recipes i use for lunches: Grilled " Cheese " Sandwich 1/3 c water 1/8 c nutritional yeast flakes 1 T flour 1 T fresh lemon juice 1 T sesame tahini 2 1/4 t ketchup 1 t cornstarch 1/2 t onion powder 1/8 t garlic powder 1/8 t turmeric 1/8 t dry mustard 1/8 t salt 4 slices whole grain bread grainy mustard spread combine all ingredients except bread and grainy mustard spread in a medium saucepan and whisk until smooth. bring to a boil, stirring constantly. reduce heat to low and cook, stirring constantly, until thick and smooth. remove from heat. spread mixture on 2 slices of bread. top with other 2 slices. grill in non-stick skillet or skillet misted with non-stick cooking spray or small amount of vegetable oil. makes 2 sandwiches. i usually measure out 2 batches of the dry ingredients and put one in a jar for future use. i make the filling while cooking breakfast and grill the sandwiches slowly while eating breakfast. then i wrap the sandwich in a paper towel and bag it. i also open a can of tomato soup and put that in a microwave container. i reheat the sandwich just a bit in the microwave after i've heated the soup. source: Breaking The Food Seduction by Neal Barnard, M.D. ----- Rice, Zucchini, and Corn Salad 1 c cooked brown rice 1/3 lb. small zucchini, cut in half lengthwise and sliced into half moons 2/3 c cooked whole corn kernels (fresh, frozen, or canned) 1/16 c thinly sliced scallions 1 T fresh lemon juice 3/4 T extra-virgin olive oil 2/3 t dijon mustard 2/3 t dillweed 1/8 t salt combine rice, zucchini, corn, and scallions in a large bowl. whisk together remaining ingredients. pour over rice and vegetables and toss well. serve warm or thoroughly shilled. makes 2 1-cup servings. i use leftover rice. i didn't like dillweed much before, but this flavor combination was surprisingly good for me. my husband didn't share my enthusiasm, but i'd think it was worth a try. source: Breaking The Food Seduction by Neal Barnard, M.D. ----- Thai " Chicken " Wrap whole wheat tortillas seitan, sliced thin rice noodles spinach carrot tomato peanuts thai citrus sauce i adapted this recipe after having this at a vegetarian restaurant. the rice noodles and the thai citrus sauce i use are from Thai Kitchen. i cut the carrot into sticks and use cherry tomatoes cut in half. i also chop the peanuts. i put everything except the tortilla in a bowl and toss it with the sauce until well-coated but not soggy. i pack that separately from the tortilla and put it together at lunch time. ----- those are my three favorite lunches, i suppose. i've got others, so if our tastes match, let me know and i'll share some more. i'm working my way through the various cookbooks i've bought. one of them is The Natural Lunchbox. stevie Quote Link to comment Share on other sites More sharing options...
