To save time, I use organic onion soup mix from the health food store & vegan sour cream substitute. I've never tried to make it from scratch & GIS didn't turn up anything useful but I'll post one if I find one. Guest guest Posted January 8, 2004 Report Share Posted January 8, 2004 I make a miso onion soup that is similar to a french onion soup. I slice up about 3 onions lengthwise (so their long and skinny) and saute them in olive oil until they are well done and translucent. I flavor it with Tamari soy sauce while it is sauteing. I add water and bring it to a boil and then remove from the fire and let it cool a few minutes. Then I add a few tablespoons of barley miso and let it set again for about 10 minutes before we eat it. You can also top it with homemade croutons if you wish. I take some whole wheat breat and spread a little olive oil on it and then sprinkle with garlic granules and sea salt, then broil for about 4 minutes. I then dice the toasted bread and put it back in the broiler for about another 2 minutes. My family likes it.
