I made this last week and it was really good and simple so I thought I would share! 2 tbsp margarine / margarine substitute 2 tbsp salad oil 2 large onions, thinly sliced 4 ounces small mushrooms, quartered 1.5 cups pearl barley, rinced and drained 2 medium carrots 1/2 tsp thyme 1 clove garlic, minced or pressed 3.25 cups vegetable broth Heat margarine and oil in a frying pan over medium-high heat. Add onions and mushrooms. Cook, stirring often, until lightly browned (8-10 min) Mix in barley and cook, stirring, until lightly toasted (3 min) Add carrots, thyme, garlic, and broth. Bring to a boil; reduce heat, cover, and simmer until liquid is absorbed and barley is tender to bite (45 min) Season to taste with salt & pepper, sprinkle with parsley. Makes 6 servings. I baked acorn squash halfs and mounded the barley mixture into it, the sweet taste of the squash really complimented the pilaf. I got this from the Complete Vegetarian Cookbook from Sunset Books / Sunset Magazine.
