Guest guest Posted January 20, 2004 Report Share Posted January 20, 2004 FRESH TOMATO SAUCE 12 lbs. tomatoes, peeled and diced 1/4 c. oil 3 med. onions, sliced 2 med. green peppers, diced 3 lg. carrots, sliced or shredded 3 med. cloves garlic, minced 1/8 c. brown sugar (or alternative sweetener) 1 (12 oz.) tomato paste 2 tbsp. salt 1/2 tsp. pepper 1 1/2 tsp. basil 2 tsp. oregano Heat oil on medium. Add oil, onion, garlic and green peppers until tender. Add tomatoes and other ingredients. Bring to a boil over high heat. Partially cover. Reduce heat and simmer 2 hours, stirring occasionally. Put in freezer containers for up to one year. When thawed for spaghetti sauce, add another can of tomato paste.
