My middle daughter (Angie) and I are vegetarians trying to cross over to "vegan". The rest of the fam are diehard carnivores and junk food junkies. Angie is also trying to raise her daughter to be vegan, but Angie's husband is, like the rest of the fam, a carnivore and junk food junkie. The rest of the fam thinks that Angie and I have gone TOTALLY NUTS. We live in the USA, Ohio to be exact. Anyway, the recipe I am submitting is one that Angie and I just love. We have made it twice this week. Whole Wheat Banana Muffins 1-1/2 cups whole wheat flour. 1/4 cup wheat germ. 1 tsp. cinnamon. 2 tsp. baking powder. 1/2 tsp. baking soda. 1/4 tsp. salt. 1/2 cup chopped walnuts. 1/4 cup corn oil. 1/2 cup maple syrup. 3/4 tsp. vanilla extract. 2 or 3 mashed bananas. 1/4 cup applesauce. Preheat oven to 350 degrees. Combine first seven ingredients. Combine remaining ingredients and stir into the dry mixture until thoroughly combined but don't "over beat". It will make a thick batter. They think I've gone over the edge, too, but they have more cause than what I do not eat. My son calls me "Tree Hugger". I wear that with pride. Thanks for the bread recipe.
