Hello everyone! I am a new member - my name is Mary,

I am 30 and live in southern Illinois. I have been a

strict vegetarian for 12 years for ethical reasons. I

have been evolving into a vegan. It's a slow process,

slowed down even more since I rescued some hens and

have started eating their eggs. But my leather is

gradually being replaced, and I have lots of good

vegan recipes to share. I hope to get some good

recipes and inspiration from this group and am excited

about joining!

 

Here is a recipe for tofu nog. It's easy and

delicious!

 

 

TOFU NOG

 

2 pkg. silken tofu

2 cups vanilla soy milk

1 tablespoon vanilla

1/4 cup sugar

2 tablespoons brown sugar

1/4 teaspoon tumeric

1/2 - 1 cup rum or equivalent extract

nutmeg

 

Blend all ingredients (except nutmeg) in a blender,

chill. Sprinkle with nutmeg. Serve.

Hi and welcome-

 

I was just wondering, about the hens, do you take care of them personally?

Are there a lot of them? Do they seem happy?

Here's a recipe, just to make this on topic:

 

Maple No-Bake Cookies

(it contains sugar, but I bet you could use sucanat)

 

1/2 c sugar

1/3 c olive oil

1 c maple syrup

1/2 c peanut butter (or almond butter)

3 c oatmeal

1 c wheat germ

1/4 t vanilla

 

Run the oats through a food processor until it is like very coarse corn

meal. Put it in a bowl with the wheat germ. Dump the peanut butter on top

and let it sit while you prepare the other ingredients.

 

In a small saucepan, combine sugar, olive oil and maple syrup. Bring to a

boil and boil for 1 minute. Remove from heat and stir in vanilla, then pour

mixture in with oats and nut butter and stir to combine.

 

Lay out on a piece of wax paper to cool. If the sugar didn't crystalize,

cook it longer next time, put it in the fridge this time to make the cookies

firm enough to eat.

That's interesting, Mary. I don't think I would have much of a problem eating eggs from chickens I raised myself. I know they would be treated well!
