Guest guest Posted February 2, 2004 Report Share Posted February 2, 2004 You can do " lower " carb as a vegan but you cannot keep carbs as low as the Atkins diet recommends. My experience with low carbing is primarily based on dealing with seriously out of control diabetes. I can say that if you are eating greens and other veggies as the base of you diet you will manage to keep you carbs fairly low and do well as a vegan. The " 9 is divine " plan from Prevention magazine acutally lays the foundation for a healthy lower carb diet. They recommend eating 9 servings of vegetables and fruit a day. If you make most of the servings vegetables you will have a very satisfying diet that is relatively low carb. Then there is the protein " issue! " Tofu and tempeh are great sources of low carb protein. You can do a lot with them. Also, the fiber content in most beans helps to ameliorate the actual carb count on beans. The unsweetened soymilk is a good alternative and if you need a touch of sweetening...then add a bit of stevia. Please avoid all the " convinience " foods that are on the low carb market. They will not help you...they will help someone else get rich. Avoid grain products too...even the " low carb " ones... You can lose weight...eat lower carb and get healthier on a vegan diet.
