RECIPE: Chunky Tomato Soup

Another recipe from my diet plan. this is what's for supper tonight. :-D

 

 

 

 

 

Ingredients:1/4 small onion 1 clove garlic 1/2 cup vegetable broth 1/2 cup water 1/4 cup textured vegetable protein (tvp) 1/4 tsp. oregano 1/4 tsp. thyme 1/4 tsp. black pepper 1/2 cup canned, crushed tomatoes, low sodium 1/2 large celery stalk 1/4 cup zucchini or yellow squash 1 tbsp. fresh parsley 1/4 tbsp. olive oil

Directions:Prepare rice according to recipe, omit salt. Rinse and chop zucchini, onion, celery, and parsley; mince garlic, set aside. Chop parsley, set aside. In a medium saucepan, heat oil on medium and cook onion and garlic until soft. Add broth, water, textured vegetable protein (TVP) and seasonings. Bring mixture to a boil; reduce heat and simmer, covered, about 20 minutes. Add crushed tomatoes, zucchini and celery; return to boil, reduce heat and simmer another 10 minutes or until vegetables are tender. Mix in rice, sprinkle with fresh parsley. Serve.

i think i'm having a bad day.

 

The first instruction says to cook the rice. But the recipe list doesn't include rice.

 

Help please

my bad. the diet plan lists rice separately. :) my diet plan (for one person) says to cook 2 tbsp of rice. I use brown long grain rice.
