I used the instructions plus half of the free sample starter from http://www.tempeh.info/maketempeh/how-to-make-tempeh.html for the first batch. For the second batch I used the remainder of the sample and also sort of " appropriated " some of the great ideas shown at http://www.geocities.com/pvachuska/tempeh/. The sample amounted to about two level teaspoons, BTW, which was plenty. I used my round plastic dehydrator (about 13 " dia, five trays, can't find the brand name on it) plus some spacers between the trays to keep the heat under control, and a thermometer lying on top of the tempeh bags (which were in the top tray). Took a while to figure out how to stabilize the temperature at the right value, and how to deal with the temperature rise as the beans began to ferment, but it turned out not to be rocket science. The first batch wasn't pretty (I fermented it 48 hours--too long) but it tasted very good. The second batch is pretty (40 hours), but I haven't tried it yet.
