I'm sorry that I cannot recall the author of this. She has a cookbook In A Vegetarian Kitchen. I took a whole collection of her recipes she had posted on the web and put them together into a Word file. They are very interesting and good, but you do have to make some changes to make some vegan. But, we're used to that.

 

If anyone would like the file, please write to me. This was lifted out of a section discussing various bean' properties, cooking methods, and uses. I am of the school that you do not presoak lentils. They cook so quickly and can make such a rich sauce. I often see suggestion that you rinse them, but I wonder if that isn't a hold over from the days when you didn't get beans and grains already cleaned and sealed in packages. I never do it.

 

LENTILS

This small, peppery legume has the advantage of cooking quickly without presoaking. Brown (or green) lentils are widely known in this country, but tiny

red lentils, a staple in Indian cookery, are gaining in popularity; they are a bit milder in flavor and cook faster than larger lentils. Don't think of

lentils only for lentil soup:

They also make excellent burgers.

Lentils are particularly tasty when stewed with curry spices, tomatoes and spinach.

Try combining lentils with noodles, flavored with lots of sautéed onion, bell pepper and a touch of tamari.

Don't forget the vegan answer to the meatloaf -- lentil loaf! I actually mash

my lentils in the food processor and then use them with my standard uhmmm loaf

recipe. It works just fine.

 

With superior protein and iron in a lentil (especially if combined with rice in

a meal) make them a cheap and wonderful substitute for ground flesh ewww.

 

Just rinse them really well and pick carefully. Dried lentils tend to be full

of little stones, don't know why, but it is so.

Hi,

 

I am looking for a veggi loaf recipe. Not so much a bean loaf but a veg.

protein loaf. I use to buy a good one that was a mix in a box that my

husband loved, but I don't see it around anymore. Any ideas?
