However, I have been hesitant to use TVP because I'm not sure what to do with it! I've heard its a good substitute for meat, but I'm more interested in the b12 content. I just use it anywhere where loose hamburger was used in your *old diet* .It is great in lasagne, cabbage rolls, casseroles, pasta sauces. I reconstitute it with water, or any other liquid (veg. broth). You can add flavors to the tvp using soy sauce, spices, etc. Also, don " t be afraid to try the chunky style as well. Guest guest Posted March 25, 2004 Report Share Posted March 25, 2004 Stuffed Green Peppers by Jaci 6 medium green peppers (or 3 large ones cut in half) 1 C. brown rice (uncooked) 1 C TVP, soaked 1 lb. mushrooms 1 md. onion garlic powder or 1 clove garlic 1 t. black pepper 2 T. parsley 2 T. olive oil (optional) largest can tomato sauce · Put rice on to cook (1 C. rice to 2 ½ C. water: boil water, add rice, cover and reduce heat. Cook until water is absorbed - about 50 minutes) · Clean (remove seeds) and immerse peppers in enough boiling water to cover for 10 minutes. Remove from water and drain in colander. (Or add 1 teaspoon of water to each pepper and microwave on high for 10 minutes.) · Clean mushrooms and onion (and garlic, if being used) and chop in a food processor or very finely by hand. · Sauté mushrooms/onion/garlic in large pan (in olive oil if desired) until most of the water evaporates. · Add Recipe Crumbles and ½ of tomato sauce to pan. Heat thoroughly. · Add rice and mix well. · Arrange peppers in a baking dish and fill with mixture. · Pour rest of can of tomato sauce over top. Bake in 400° oven until bubbly (about 15-20 minutes). I use I cup of the TVP mince, put in a bowl add 1 cup boiling water and a sprinkle of oregano and basil, plus maybe 1 tspn of olive oil, even a little garlic then leave it to stand for about 15 minutes, then after frying the onions I throw it in the pot.
