Guest guest Posted April 4, 2004 Report Share Posted April 4, 2004 * ORANGE, TOMATO, BROCCOLI, AND SWEET ONION SALAD 2 cups 3/4-inch pieces broccoli florets and peeled stems (about 8 ounces) 3 large oranges 2 large tomatoes, coarsely chopped 1 cup diced sweet onion (such as Vidalia or Maui) 1/4 cup chopped fresh basil 1/4 cup raw sunflower seeds (can be any raw, sprouted seed or nut) 2 tablespoons cold pressed extra virgin olive oil 1 1/2 teaspoons grated orange peel Wash and cut broccoli (peel stems and include as well). Pat dry. Place broccoli in large bowl. With zester, scrape all three oranges, avoiding the white pith. Holding oranges over small bowl to catch juice, cut between membranes to release segments. Cut each orange segment crosswise into 3 pieces. Add orange pieces, tomatoes, onion, and fresh basil to bowl with broccoli. Add oil and orange zest to bowl with collected orange juice; whisk to blend. Season to taste with salt and/or pepper (optional). Pour oil/OJ/orange zest mix over broccoli mixture and toss to coat.
