Guest guest Posted April 6, 2004 Report Share Posted April 6, 2004 This was based on a recipe I found on epicurious.com . 2 cups pearl barley 2 cups vegetable broth 2 cups water 3 onions, diced 1 red pepper, diced 8 oz. mushrooms, sliced olive oil soy sauce to taste cover bottom of saucepan with olive oil; heat over high heat. Add onions, stirring regularly, for approximately 10 minutes or until nicely browned. Add barley, stir for 3-5 minutes until lightly toasted. Add broth, water, red pepper, mushrooms. Cover and simmer for 45 minutes or so until barley is done. Season with soy sauce. My partner (who's not a vegetarian) loved this, and so did I.
