Guest guest Posted April 6, 2004 Report Share Posted April 6, 2004 Okay, i've piddled with several recipes several people were kind enough to send me for raw mock salmon, and I have what I think is a workable recipe for mock salmon cakes. Can be served raw or panfried. 1 c. raw almonds 1-1/2 to 2 c. carrot pulp (carrot pulp after juicing works well), loosely packed 5 shitake mushrooms (*) 1-2 T dulse flakes (**) 1-2 T. dried dillweed (**) 1-3 T. lemon juice (**) Grind almonds to a powder in a coffee grinder. Chop mushrooms into very small pieces. (*) Mix all ingredients together. Form into patties and serve raw (for raw foods diets) or panfry in olive oil until brown on both sides. Serve with fresh lemon wedges and/or vegan sour cream. (mix additional dill in with the sour cream if you wish) (*) What I did for the shitake mushrooms was to take 5 dried mushrooms and chop them in a hand chopper before reconstituting in water. I ran them through a sieve to press out the excess water before adding it to the mixture. (**) These ingredients are to taste. Use more or less as desired.
