Sarah in Whistler http://www.bestveg.com ~~~~~~~~~~~~~~~~~~~~~~ Lemon Almond Rice 6 tbsp margarine (or vegan butter) 1 medium chopped onion 1 tsp grated lemon rind 2 cups rice 3½ cups Veggie broth 3 tbsp lemon juice 3 tbsp finely chopped parsley ½ cup lightly toasted almonds Melt butter in a saucepan. Add chopped onion and lemon rind. Cook on medium-low heat until onions are clear (not browned). Add 2 rice and mix to coat. Pour in broth and lemon juice. Cover and cook under low heat until all the liquid has evaporated (approximately 20 minutes). Mix in parsley and toasted almonds just before serving.
