It is easy and nutritious! 1 cup quinoa, rinsed 1 can red beans, rinsed and drained (or 3/4 cup dried red beans, cooked and drained) 1 15-ounce can diced tomatoes 3/4 cup sliced jalepeno-stuffed olives, or other olives hot sauce to taste Boil quinoa in 2 cups of water for 15 minutes or until water is absorbed.
