As for me, I cooked up what was in the fridge - not a lot of any one thing except bell peppers/capsicums. Didn't feel like a stirfry as such, but ended up with sort of one anyway. If I had to call it anything, I'd call it Mushroom and Pepper Fried Rice-less. Several large mushies, four or five soaked dried mushrooms, half an onion, three or so cloves of garlic, one small red pepper and one small green one, 1 small carrot, several 'rounds' of ginger, one-third pkg firm tofu slivered and marinated in cayenne and Braggs - I think that was about all but it was last night, after all. Oh yes, a cup of frozen green peas and a cup of frozen corn - always in my freezer. I chopped everything except the onion, fresh mushies and the peppers very fine and diced the rest. Found that I was out of rice (horrors!) for what was supposed to be fried rice except for about a cup of cooked in the back of the fridge, so kept going anyway. Sauteed the lost, except for the rice, in a tiny smidge of oil (okay, added a little water and steamed it all after the garlic and mushrooms had been stirred around), gave a shake of crushed chilies to the pan and stirred in the rice until it was hot, added a little tamari. As I say, it would have been fried rice which was heavy on the veg, except with only about a cup of rice for two people it was even heavier on them. My dh declared it a triumph - and said leave out the rice next time. I agree *lol* I guess it was sort of a chinese-inspired diced cooked salad? Not a recipe - but it's what we had. Not gourmet cooking either *lol* But you would ask!!!! I'm hanging out for Megan's alfredo sauce recipe and the recipe for her pasta dish!
