I'm supposed to contribute to a tray of sandwiches which will go in the freezer for a family that needs them (omnivores, adults and kids of many ages). Back when I WAS a meat eater, one sandwich we'd make the nite before and freeze for quick lunch packing in the morning, was a simple ham and cheese. Just use really fresh bread and whatever meat and cheese you like. Any sandwich spreads made out of gluten freeze well (I like to grind gluten and add seasonings and chopped nuts for sandwich fillings). Vegan cream cheese with olives, chopped nuts, soy sauce, pimento, etc. makes a good sandwich filling and they freeze well also.
