HELP! Need more protein, more leafy greens!

Confessions of an overweight vegan...

 

I like Fritos. And Wheat Thins. And potato chips....

 

Usually, eating a nice big wholesome meal will keep me from the junk

food, but occasionally, i slip.

 

But enough of that. I've been doing some calculations, and for my

bodyweight (let's just say cow-sized), I need more protein. Certainly

more than 54g.

 

I'd love to hear some tasty ideas. I love stir-frys, pasta, rice

casseroles. My expertise with tofu is severely limited to frying and

pureeing (for lasagna) and my luck with TVP is zilch. So if anyone

can help in these areas, that would be good.

 

As for the greens.... I recently noticed that, as a vegan, I sure

don't eat that much leafy green food! If you don't count lettuce &

spinach, (or herbs!) I don't eat any at all! Mom served kale and

collards to me when I was small... and I do NOT like 'em.

 

I'd love to find some recipes that use more green leafy veggies but

still have lots of interesting flavor from other foods. In other

words, I don't just want steamed greens! ;-)

 

Can anyone help me?

Lauren, I am no expert in anything except reading a lot, but not even that deep enough to refer you to any citations.

 

But, I think if you strip away all the people selling something or fronting for this group or that, they would all agree that we should forget all the stuff about how much of this we get, how much of that we are missing, or how we need to combine, supplement, and stress dose for proper nutrition.

 

We know we can't live on sugar and fat. We know we should try eating more greens and yellows, etc. We know we have to exercise more and learn to be happier with ourselves.

 

Here's my goal and maybe you can be my inspiration that it can work. Just do what you KNOW is right for one year. Then pay a visit to a nutritionist once with the money you save on Hostess and Fritos during that year to find out how right you have been the past year. Now remember, they know you won't feel you got your money's worth if they don't make some changes, so let them earn their fee and then go back to what you did last year for another year and see another nutritionist. Don't cheat! See those dietitians. Oh, and borrow the new batch of 500 books that come out each year telling us how badly we are doing, read them, and return them to the library, with a fine or two if you can remember. We have got to support the public libraries. The best way to do that besides offering more taxes is to let the publishers keep publishing because they take tax breaks for giving product to libraries. If they can't make profit from the product they give away, they won't be able to afford to publish the really good stuff, oh like, let's say, how religion/politics/sports will complete our lives. Don't forget the fines. What a business; making money off free product that no one is waiting to borrow.

Oh, just for something redeeming here, there is a comparison in the recent Nutrition Action Health Letter about soy foods that shows how much of everything they contain. I'm not sure if it is on line yet, but try:

Hi Lauren:

Don’t feel

alone. I love Fritos with soy sour cream and Lipton onion dip mixed in! Cookies

and soy ice cream oh I could go on all day. I highly recommend you pick up DR GREGER MD’s video on eating vegan.

You can get it through Vegan Outreach. It’s absolutely terrific for a

learning how and why to eat certain foods as well as how to prepare them

EASILY! I have found that the more I eat healthy the easier it becomes. It

feeds on itself so to speak! I also purchased a Vita Mix which was a large

investment but worth it! Really a good blender is helpful. You can throw greens

into it and make a delicious raw soup. I am not one to chew on raw fruits and vegetables

but I can drink them most of the time. Just go to google and plug in vegan

recipes. Spend time searching and you will be amazed what’s out there! Oh

and vegsource.com is fantastic. Especially Chef Deb on the recipe board! Good

luck and hang in there!

How do you feel about beans? Chickpeas, lentils, kidney beans, black

beans, mung beans, etc. are good sources of protein. They can be made

into soups, stews, patties, pasta sauces, casseroles...

You can throw some chopped greens into many recipes, including the ones

below.

 

 

Here are some recipes I recently typed up to share with someone:

 

 

CARIBBEAN BLACK BEANS

 

1 1/2 c. chopped onion

3 garlic cloves, pressed or minced

2 Tbsp. olive oil

1 Tbsp. grated fresh ginger

1 tsp. thyme

1/2 tsp. allspice

4 1/2 c. drained cooked black beans

3/4 c. orange juice

 

Saute onion and garlic in oil for about 5 minutes, until onions begin

to soften. Add ginger, thyme, and allspice. Saute another 5 minutes,

stirring often to prevent sticking. Add beans and orange juice. Cook

for about 15 minutes, stirring often, until mixture thickens slightly.

Mash a few of the beans with the back of a spoon for a thicker

consistency. This can be served as is, or over rice, or in a tortilla

with some fresh veggies.

SOUTHWESTERN COUSCOUS SALAD

 

Salad:

2 c. boiling water

1 3/4 c. whole wheat couscous

1 large tomato, chopped

3 c. cooked black beans

1/2 c. chopped green onion

1/2 c. chopped cilantro

2 c. frozen corn, thawed

2 red bell peppers, chopped

 

Dressing:

4 Tbsp. olive oil

1/3 c. lime juice

1 tsp. cumin

1 tsp. salt

 

Pour boiling water over couscous. Cover and let sit for five minutes,

then fluff with a fork. Stir in other salad ingredients. Whisk together

dressing ingredients, then add to salad.

Inquirer, many years ago]

 

 

 

 

RED LENTIL SOUP WITH EAST INDIAN SPICES

 

2 tsp. butter

1 onion, chopped

1-2 Tbsp. minced garlic

1 tsp. turmeric

1 tsp. cumin

1/8 tsp. cayenne

1 c. chopped tomato

1 c. dried red lentils

4 c. water

1 tsp. salt

1 tsp. cumin seeds

1 tsp. mustard seeds

1/4 c. chopped cilantro

 

Saute onion and garlic in butter. Stir in turmeric, cumin and cayenne.

Add tomatoes, lentils, and water. Simmer for 45 minutes. Remove from

heat. Add salt. In a separate nonstick pan, fry the seeds until they

start to pop. Add them to the soup, along with the cilantro.

I joined the list recently, and normally would lurk forever, but I

can relate to what you wrote. I love Wheat Thins, too, and wondered

how I could have a varied diet and be vegan. The McDougall weight

loss book has made a big difference for me (McDougall Program for

Maximum Weight Loss). I use a lot of the recipes, and I also have the

McDougall cookbook. My family is not vegan, and they enjoy the

dishes, too. As far as tofu goes, I like to cut it up and add it to

the rice in the rice cooker. Then when I make stir fry, it's already

steamed. If you aren't used to greens, you might try making a small

salad and having that before your meal. Then you'll get used to it

being part of your lunch or dinner. Hope this helps,
