Guest guest Posted July 29, 2004 Report Share Posted July 29, 2004 I came up with this little recipe when i was in the mood for instant mac & cheese, vegan of course. 1/2 c. nutritional yeast flakes 1-1/2 c. soy milk (i use fat free SM for a low-fat mac & cheese sauce) 1/3 c. flour 1 t. salt pepper, garlic powder and/or onion powder to taste Mix all ingredients together until thoroughly mixed. Cook over LOW heat (so the soy milk doesn't scorch or curdle) until sauce thickens. Makes enough sauce for about 2 cups dry macaroni or other small/medium pasta of choice, cooked & drained. Feel free to experiment with other seasonings for the sauce. Yes, I know it weren't vegan, but when you got the craving at 4:00 in the morning... The only milk I had was vanilla soy, which is actually very good, but when you put it in the M & C, either the heat or some chemical combination really brought out the soy flavor in this milk, which I don't taste when I use it in cereal or other cold uses. Guest guest Posted July 30, 2004 Report Share Posted July 30, 2004 Here is another vegan Mac and cheese recipe cook 16 oz. macaroni Blend in blender until smooth: 2 cups water 1 cup cashews add to blender: 1 tsp. onion powder 1 tsp. garlic powder 1 tb. lemon juice 1 4oz jar pimientos 1 TB. Chicken style seasoning Vegetarian add blended ingredients to macaroni and bake in oven at 350 degrees for 30 minutes. Guest guest Posted July 30, 2004 Report Share Posted July 30, 2004 there's actually a company out there Road's End Organics that puts out a vegan mac & cheese sold in health food stores. http://www.chreese.com/ I tried the Mac & Chreese though before and i wasn't too thrilled with it. i think it had something to do with the sauce combined with the taste of the whole wheat macaroni. It also tastes really good with canned green chilis or salsa. Thanks for sharing!
