Guest guest Posted August 5, 2004 Report Share Posted August 5, 2004 Hello everyone My name is Leigh and I live just North of Houston, TX. I am trying to be a good vegan, but it is hard. I bought some oat groats at Wholefoods and thought I'd try it out. I cooked one cup of oat groats in 3 cups of water for about 45 minutes. Drained and rinsed in cold water and put in the fridge for breakfast the next morning. Put 1/2 cup of cooked oat groats in a bowl, added a handful of frozen blueberries (we pick our own), added nut cream (see how to make it below), maple syrup and a sprinkle of toasted wheatgerm. It was DELICIOUS, so I had the same for breakfast again today! Nut cream can take the place of dairy cream often. Make it by grinding a good handful of raw cashews (or other nuts on hand with about 2 heaped tablespoons coconut (sweetened or unsweetened depending on your taste) until fine, then adding about 3/4 cup water to the ground up mix and blended more. You will need to have a strong blender or be patient, and it will probably still have a lumpy consistency. You can strain it, but you will lose some of the fibre/nutrition, I would think. YUM YUM!!! Of course nut milk can be made this way, just add more water. P.S. Thanks so much for all of you who share recipes at this forum ... they are so appreciated. I diced up a fresh Nectarine into a cereal bowl, put some cooked oat meal on top of it and then stirred it all together with some walnuts, shelled hemp seeds and agave syrup. It was so delicious. Now I'm ready for my VERY busy day!
