Guest guest Posted August 14, 2004 Report Share Posted August 14, 2004 i was in the mood for devilled "egg" sandwich so I came up with this recipe based on a few recipes I found around the net for devilled egg recipes. Devilled Tofu w/Capers 12 oz extra firm tofu 1/4 c. prepared (yellow) mustard (or to taste, feel free to experiment) 2 to 4 T. capers, drained (to taste) a few dashes of sea or mineral salt Mash all ingredients together in bowl with a pastry cutter. Use as you would egg salad filling, in a sandwich, on top of a bed of greens, or a filling for something else. Also feel free to experiment with other types of mustard, like dijon, for a different taste. This doesn't need tofu mayo, so it can be a low-fat recipe, especially if you use lite tofu like mori-nu. And if you don't have capers, those can easily be left out.
