Having spent my whole life eating meat and dairy, I’m pleasantly surprised to find I don’t really miss most of it at all when I eat, but I’m a bit challenged when I’m doing the cooking. My husband is trying hard, but has a bit more trouble than I do making the changes. One of his favorite things is any kind of bean soup – with a ham base, of course! Have you tried Bouillon powder for flavouring soups? It comes in a vegan variety and I find it very good in soups & that kind of thing. My partner is not veg & I know he really feels the lack sometimes when I cook. Or maybe it's just my cooking . I've found a couple things helpful in soups but I don't think I've found anything that mimics a ham base yet. Vegetarian Oyster Sauce (in asian markets & online), made from mushrooms mostly, excellent beef-like base. Adobe sauce that comes with the canned chipotles, has a smoky, bacon-y taste but also spicy from the peppers (latin markets or my Fred Meyer has them on their 'ethnic' aisle), finally my frijoles taste like I remember growing up. Hope that helps. Let me know what you work out with the ham base taste. Sometimes a little extra oil helps too; that did the trick when I was trying a veg lemon-rice soup which traditionally has a chicken base. Peace, Diane , " K.C. Guest guest Posted August 15, 2004 Report Share Posted August 15, 2004 you can use marmite or vegemite for a "beef" base broth flavoring. dissolve a little in a cup of hot water, a little goes a long ways. This is my favorite seasoning blend for a "chicken" style broth. I often use it when a recipe I make calls for vegetable broth. About 1 teaspoon to 1 T. per cup of hot water. All Season Blend1 1/2 C nutritional yeast flakes3 T salt1 T onion granules1 T paprika2 t garlic granules1 t parsley flakes1/2 t turmeric1/4 t thyme1/4 t marjoram1/4 t dill seedPlace all ingredients in blender or food processor and process until finely ground.
