I make it different every time, but a home- made curry powder is wonderful. If you have access to an Indian grocery, these spices can be purchased inexpensively and in modest bulk. (6-8 onces of each spice in a little bag. I pay $4-$5 per bag usually.) My favorite 'Curry' mixture: 2-3 tbs corriander seeds 2 tbs cumin seeds red Indian dried chilis (amount depends on how hot you desire it to be) Toast in a dry, greaseless iron skillet (or something that conducts heat well-heavy skillet) stirring constantly until the seeds deepen in color to a light brown and all spices are fragrant. Remove from skillet to bowl and allow to cool. Grind in coffee grinder reserved for spice grinding purposes. Store in dry, glass bottle with tight lid in a dark, cool place.
