Guest guest Posted September 13, 2004 Report Share Posted September 13, 2004 so, i am not really the worlds most proficient cook. i was wondering what people ate, that would be easy for me, when they first began to transition into veganism? is there anything that you eat now that you wish you knew to eat then? what was the hardest thing to give up? i read one post about someone who had succumbed to hot wings. that is also my particular weakness. i dont really like the taste of chicken but when you put that delicious hothothot sauce on it, its so much better. i guess the hotness really drowns out the taste. does anyone have maybe a buffalo tofu recipe or some such concoction? i guess i would also need vegan bleu cheese dip. i heard somewhere (herbivore magizine- my fav!) that such a thing existed somewhere. has anyone else ever heard of/seen such a thing? sorry its so many questions, i'm just really curious as i have never met another person in real life who is a vegan. people down south like their meat. except for me apparently. but then there are those hot wings.... anyway. any answer to any of these questions would be very much appreciated:) thanks! sam Quote Link to comment Share on other sites More sharing options...

I live in the countryside in Ohio and it is very meaty here too (I actually had a consession stand worker at a small town fair laugh at me and elbow his coworkers b/c I ordered something without meat - it was unheard of to them!). So I have an idea of what you are up against. Anyway, one tip I have is to eat raw fruit, veggies, and nuts. It is so healthy and so easy! For example your breakfast could be an apple with peanut butter. Or berries and a few almonds. Not much to prepare except washing and cutting. The only place I've seen convenience vegan meals (i.e. pre-made, frozen dishes) is at health food stores. It is expensive, but a nice treat every once in a while. If there is a sauce you like (like on the wings, or for me Asian peanut sauce) then just find something else to put that sauce on.. like fried tofu or veggies. Another thought is be sure to eat your beans, nuts, and whole grains. I find that if I do not eat these things I end up feeling hungry and unsatisfied. Since you are starting out, you might want to start with canned beans to make it easy on you. Starting w/whole, dried beans is supposed to be more nutrious but is more challenging to work with. Below is a recipe I probably got off this list. It is excellent! I like how it is 1 time baking to make many meals. It freezes well and can be eaten hot or cold. Personally I don't like margarine b/c it can clog our arteries in the long run, so I substitue a light oil (like safflower). Jen Lentil Mushroom Bake Legumes - Lentil INGREDIENTS · 8 oz / 225 g red lentils · 1 large onion, chopped · 2 cloves garlic, minced · Mushrooms, chopped or slivered · Margarine · Thyme, coriander, oregano, basil, pepper · 1 T tomato paste · 1 cube vegetable stock · 1/2 cup bread crumbs METHOD Heat the oven to 375F/190C. Grease a bread pan with the margarine. Put the lentils and stock cube in a pan, add some water and boil it all. Skim off the froth. Cover and simmer for twenty minutes. Drain the water. Melt some margarine and sauté the onions, garlic and mushrooms until soft. Add the lentils, then add the spices to taste and the tomato paste. Add half of the bread crumbs and mix it all up. Put it in the bread pan and sprinkle the rest of the bread crumbs on top. Guest guest Posted September 16, 2004 Report Share Posted September 16, 2004 When I first became a vegetarian I started out cooking familiar food substituting meat substitutes for meat in enchiladas, manwiches, etc. I simply adapted recipes to make them veg. Then I discovered all the more " vegetarian " type foods like tempeh, tofu, nutritional yeast, etc. and now cook with them more often. My advice would be to get two cookbooks--one with more familiar foods like " Betty Crocker's Great Main Dishes Without Meat " (not vegan though) and then maybe a more experimental cookbook to try out all the other unique vegetarian dishes. I really enjoy the following lasagna recipe--it makes lots and freezes well! TOFU-SPINACH LASAGNA 1 pound mashed tofu 1 Tablespoon water 2 teaspoons water 1/4 teaspoon black pepper 1 teaspoon salt 4 cloves garlic, crushed 2 15-ounce cans tomato sauce 1 small package lasagna noodles (whole wheat works well) 1 pound frozen spinach, thawed (or 1 pound fresh, cooked) Combine tofu, water, Italian seasoning, pepper, salt, and garlic. Pour 1 cup tomato sauce in a 9x12 " pan. Alternate layers of noodles, tofu mixture, tomato sauce, and spinach. Bake covered at 350 degrees for 45 minutes.
