Guest guest Posted September 19, 2004 Report Share Posted September 19, 2004 Hello, I am 33 and new at this as well. I have been having fun looking up and trying new recipes on the net. I have not told my kids that we have been switching to vegan, and they have not noticed..lol. It has been about a week so far. http://vegweb.com/food/pasta/2976.shtml Above is a link to a wonderful dish we had tried last night, it was sooo good. My husband was not to pleased when I told him what we were having, but when he tasted it, he was very impressed and asked me to make it again next week...lol. I am really having fun with this. It is a challenge for me to find things that they will eat, but once I have weeded through the recipes I think we will be fine. The only thing that really concerns me is cooking recipes that contain oil, as I am not sure which one is the lowest fat, and better for you. I am trying to watch my weight as I have Thyroid Cancer and since the surgery, my metabolism went to pieces. I have been steadily gaining about 5 pounds a week, and have since put on 110 pounds in less than 8 months!! My doctor wanted me to have a stomach bypass, but when I went to get second opinions, most doctors said that they would not do it because I would still be gaining the weight on after the surger because of my metabolism. I have been through so much, I would be happy if my weight were just to stay at a stand still instead of gaining each week. My hopes and expectations are realistic I think. I just want to stop gaining right now. I am hoping that the not eating of meat and meat products will give me that chance to get my life back. I am not an over eater, and I don't eat a lot. I am not able to get out and do the exercizes everyone else can, because after the radiation, I have not been able to walk very well. I am to young for all of this. This is my last option before the bypass. If anyone has any suggestions or comments, please feel free. Thank you for reading, you all have a lovely group here.
