cornbread recipe request

I don't have a recipe, but my mother-in-law converted her old recipe vegan by using coconut milk instead of milk or buttermilk (I forget which is usually used in cornbread).

Corn Bread

 

Recipe By : Eden Foods

Serving Size : 8 Preparation Time :0:00

Categories : Breads

 

Amount Measure Ingredient -- Preparation Method

1 1/2 cups cornmeal

1/2 cup flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups soy milk

1 tablespoon vinegar

1/4 cup maple syrup

3 tablespoons oil

 

Combine cornmeal, flour, baking powder, baking soda, and salt. In a separate bowl combine all liquid ingredients. Stir into flour mixture.

 

Pour batter into an oiled 8x8x2 square pan. Bake at 350F for 25-30 minutes, until the middle springs back when gently touched.
