vegan chicken pot pie?

Hey everyone,

 

I know it's kind of tall order, but I just got some mock chicken from

an Asian grocery store, and I want to transform it into chicken pot

pie. I'm thinking peas, carrots, sweet potato, mushrooms, barbeque

sauce, vegan sour cream? Any ideas, or is it an impossible dream?

just find a recipe for chicken pot pie on google and substitute all the appropriate ingredients. it's that simple. :)

There is a vegan "chicken" flavored gravy sold at my local food store (in a brown envelope) that would probably be a good substitute item on the liquid filling to go with your veggies. Then you just need to find a vegan pie crust.

I went on a binge of trying to invent pot pie recipes and the end product was wonderful. I bought a store bought deep-dish pie crust and put tofu, onions, celery, pototoes, peas and carrots in it. Mushrooms would also work (I'd sautee them first), and, instead of tofu you could use the "chicken". I made the sauce with unflavored soy milk and used McKay's "chicken style" seasoning for the flavor. I get McKay's at a Seventh Day Adventist store. That's the only place I have ever seen it. Anyway, the pot pie was great and got rave reviews.

Then you just need to find a vegan pie crust.

 

I used a commercially made "Mrs. Smith's" deep dish pie crust I bought in the frozen food dept. of the grocery store. It's made with vegetable shortening and no animal ingredients are in it. You get 2 pie crusts in the pack. I used one for the bottom and one for the top.

Here's a recipe for Tofu Pot Pie from " A Teen's Guide

to Going Vegetarian. " Mock chicken could be

substituted for the tofu, and once could substitute

vegetarian chicken broth for the vegetable broth.

 

TOFU POTPIE

 

crust:

3/4 cup white flour

1/2 cup whole wheat flour

1/2 teaspoon salt

3 Tablespoons oil

1/4 cup water

 

Filling:

2 1/2 cups vegetable broth

3 cups diced potato

1 cup finely chopped carrot

1/2 cup chopped onion

1 cup frozen green peas, cor kernels, or chopped

celery (or combination of any of these equaling 1 cup)

1/2 cup chopped mushrooms (optional)

1/4 cup flour

1/4 teaspoon pepper

1/2 teaspoon poultry seasoning

1/2 cup soymilk

1 package (10.5 oz or 16 oz) extra-firm tofu, cut into

cubes

salt to taste

 

crust:

Mix together flours and salt. Stir in oil, then mix

in water. Chill dough while making filling.

 

Filling:

In a large saucepan bring broth to a boil. Ad

potatoes, cover, and cook 5 minutes. Add carrot,

onion, and celery (if using). Cover and cook 3

minutes. Add peas and/or corn and mushrooms (if

using). Cover and cook 2 minutes or until vegetables

are tender. In a small bowl combine flour, pepper,

and poultry seasoning. Add soymilk and beat together

well. Gradually add to vegetable mixture, stirring

well. Over medium-high heat stir constantly for about

3 minutes, or until mixture is thickened and bubbly.

Remove from heat and stir in tofu cubes. Add salt to

taste.

 

To assemble:

Heat oven to 350. Using a rolling pin, roll out cough

to fit over the top of a medium-sized casserole dish

(9 " square or circle works well). Spoon

tofu-vegetable mixture into casserole dish and cover

with crust, cutting off any extra dough and folding

over and pinching edges to seal. Cut 4 or 5 slits on

top of dough to allow steam to escape. Bake for 40

minutes or until crust is done. Let stand 10 minutes

before serving.

hey there,

this is how we make it

saute 8 to 10 cups assorted veggies for 5 mins or so add your mock

chicken (we use seiten) and a hefty amount of garlic and saute for about

5 more mins. then sprinkle 1/4 cup flour on top and cook and stir for a

few more mins. then stir in 2 cups veggie broth and 1 cup soy milk, we

find that silk unsweetened works best. add a little salt and pepper and

cook stirring alot until starts to thicken. then transfer to a cassarol

dish. put a pie crust over top (don't have that recipe in front of me

but we just use a simple standard pie crust recipe) and brush with

soymilk. bake at 400 deg. for 20 to 30 min.
