I made my own little changes to the recipe to try something different. I omitted the onion and added: 1 fresh tomato, seeded & chopped; 2 tablespoons fresh dill; 1 to 2 teaspoons curry powder, & about 3/4 cup white (cannelini) beans. If you just have dried dill instead of fresh, use about 1/3 what the recipe alteration calls for. 1 tablespoon fresh herb = 1 teaspoon dried. I also used fat-free soy milk instead of rice milk, and I'll tell you, it did not sacrifice anything in the way of taste. Megan Quick and Easy "Cream" of Tomato Soup Ingredients (use vegan versions): 4 tablespoon finely diced onion 1 tablespoon soy sauce 1 8 oz. can tomato sauce 2 cup rice milk 2 tablespoon cornstarch seasonings to taste Directions: Last night, I had a craving for cream of tomato soup, so I made up this recipe. This is loosely based on a recipe I learned in my 8th grade home economics class (over 20 years ago). Saute onion in soy sauce until onion is tender. Add 1 1/2 cups of rice milk and 8 oz. tomato sauce to onions, and bring to a boil. Mix 2 T. cornstarch with remaining 1/2 cup of rice milk. Add cornstarch/rice milk mixture to soup, stirring constantly until thickened. Season to taste with your favorite seasonings. (I used a little onion powder and some spicy Creole seasoning.)
