Core the pears and leave the bottoms intact. Drizzle them with lemon juice. Fill each pear with an equal portion of cranberries and almonds. Sprinkle the pears lightly with the cinnamon. Arrange the pears, filled side up, in a saucepan. Add the cinnamon sticks to the pan and pour the apple juice and vanilla extract around the pears. Simmer, uncovered, over medium heat for 20 to 25 minutes, or until tender. Assoc. : 0 0 0 0 0 0 0 0 * Exported from MasterCook * Chocolate Mousse Pie Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Dessert Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- PIE CRUST: 1 cup spelt flour 1/4 cup cocoa powder 1/4 cup succanat 1 teaspoon baking powder 1 teaspoon baking soda 1/2 cup soy milk 1/2 cup maple syrup 1/4 cup safflower oil 1/2 cup water 1/2 teaspoon vanilla extract 1/4 teaspoon almond extract 2 tablespoons dairy-free chocolate chips MOUSSE: 2 1/4 cups chocolate chips -- (dairy free) 9 fluid ounces vanilla soy milk 1/2 teaspoon cocoa powder 1/2 teaspoon kuzu 1 1/4 blocks silken tofu -- (1 1/4 blocks=20 ounces) 1/4 cup maple syrup 2 teaspoons vanilla extract 1 teaspoon almond extract To prepare the pie crust: Preheat the oven to 325°F Mix the flour, cocoa powder, succanat, baking powder and baking soda together in a large mixing bowl. In another bowl, combine the soy milk, maple syrup, oil, water and vanilla and almond extract together. Add the wet ingredients to flour mixture and stir well to combine. Pour the mixture into a baking pan and bake for 35 minutes. Let cool in the refrigerator for about an hour. Crumble the baked dough, and press the crust crumbs into 9-inch pie plate and sprinkle with the 2 tablespoons of chocolate chips. To prepare the mousse filling: Place chocolate chips, one cup of soy milk and cocoa powder in a bowl. Dissolve kuzu in the remaining 2 tablespoons of soy milk and add to mixture. Place the mixture in double boiler and heat over simmering water on medium heat until melted, stirring occasionally, until melted. Transfer to a mixing bowl and let cool slightly. Place the tofu in a blender and blend until smooth. Add the maple syrup and vanilla and almond extracts and blend again. Fold into the chocolate mixture until well-blended. Makes one 9-inch pie. Pour the chocolate mixture into the pie crust and chill up to 2 hours or overnight before serving.
