HI everyone :)

 

I too am new to the class and Ed's introduction inspired me to get my nose out of my books and say hello :)

 

I too am hoping to loose the wieght I have but on in the last 5 years from eating a Norwegain diet of meat bread and potatoes (food I have never really liked but when in rome...) I am happy to be back on my vegen diet and love cooking all the ideas I can come up with and that others come up with. I thought I would share an idea that I am using during this weight loss time. While I realize that not eating dairy and meat causes you to loose wieght after having eaten it for a long time sometimes it is best to even cut out cooking oil also. One of the most important things in my kitchen is vegetable stock, they way I keep supplied is to save all the ends and pieces from the veggies I use like the ends of carrot, limp pieces of lettuce, unused pepper parts ect. Through the week I save these and the left overs from the week. Then on Saturday I place all the leftover veggie peices place them in a pot with water and a wee bit of salt and some spices let it boil until the pieces are mush and all the vitamins in them are in the water, strain it and place it in an old sald dressing bottle, this is what I use in place of cooking oil. Any of the broth that is left over I reheat it and throw in all the leftover meals that had lots of raw food in them, leftover salads add some more spices and there is soup to snack on for the week. Just some ideas, you may already do them :)
