tips for making non-dairy cheeses

i just discovered something really neat, and it helps you recycle, too.

 

If you're into making non-dairy or "un"cheeses, usually nut or tofu based like those Joann Stepaniak has recipes for, old Crystal Light containers (the large 6-tub 3oz size that makes about 12 quarts of crystal light) make perfect molds, for 2-3 cup bricks.

 

Just pour the cheese into the empty containers and put in the fridge to set. After they're ready, you have perfectly round slices, and you can use the lip of the container to cut straight slices as thick or thin as you like them.
