tahini

I lost my taste for tahini some time ago. I still use sesame, though.

I soak them overnight, then rinse and drain them and blend them into

smoothies, dressings and sauces, etc. I use the whole seeds (with

husks). They are organic and raw, available from Central Market in

the bulk section. I have sprouted some, so am happy with the quality.

The texture of blended soaked seeds may not be the same as tahini,

but I've made the switch for a lot of my recipes.

Jeff, I buy the unhulled sesame seeds in Whole Food. They are a little bit cheaper there and I buy a lot of them.

how long does tahini keep in the refrigerator?

 

Apparently a looong time. I've had a jar in mine for 6-8 months and it looks and tastes fine. I've actually kept opened jars of tahini for much longer than that. It doesn't seem to ever get rancid in the fridge. I assume you meant an OPENED jar. I got a deal on tahini last year, and have about 6 jars unopened in a cupboard and I trust they'll be fine until I get around to using them. (Which could be 2 years from now!).
