I soak them overnight, then rinse and drain them and blend them into smoothies, dressings and sauces, etc. I use the whole seeds (with husks). They are organic and raw, available from Central Market in the bulk section. I have sprouted some, so am happy with the quality. The texture of blended soaked seeds may not be the same as tahini, but I've made the switch for a lot of my recipes. I've had a jar in mine for 6-8 months and it looks and tastes fine. I've actually kept opened jars of tahini for much longer than that. It doesn't seem to ever get rancid in the fridge. I assume you meant an OPENED jar. I got a deal on tahini last year, and have about 6 jars unopened in a cupboard and I trust they'll be fine until I get around to using them.
