Guest guest Posted October 13, 2004 Report Share Posted October 13, 2004 hey there, one of the mexican guys i work with was talking about how his wife makes sweet baked pumpkin. it seems to be make by baking a pumpkin with a little sugar and water inside. but that was all he knew about it. has any one heard of this and know more specifics on how to do it. he said it is increadable. also since the nursery i work at started growing pumpkins this year i have unlimited access to pumpkins. does any one have any good pumpkin recipes (other then pie). peace jeff Quote Link to comment Share on other sites More sharing options...

I'm still not sure about the baking times--they may need to be adjusted. OATMEAL PUMPKIN MUFFINS OR QUICK BREAD 1 cup oats 1 1/2 cups whole wheat flour 1/2 cup brown sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/4 cup chopped nuts 1 teaspoon cinnamon 1/2 teaspoon each: ginger, nutmeg, allspice 1 cup soy milk 1 cup canned pumpkin 1/4 cup applesauce 1/4 cup vegetable oil Mix wet and dry ingredients separately, then blend together. Actually, I think the original recipe did have almost no oil, and I added some in because it seemed dry without it. But yes, you could try taking out the oil and using more applesauce instead. Last fall, he filled 2 with rice pudding with lots of raisins and baked them. Also he's filled them just with fall fruits and nuts and cranberies and brown sugar and brandy and baked them - Delicious! I'm planning to try some savory ones this year - maybe fill with curry and rice or cabbage and potato. They are fun to play with and eat.
