Hey Everyone,

I found this recipe this weekend and tried it with my kids. They loved it. They don't like the vegan version of "pigs in a blanket" but they loved the Smart Dogs done in cornbread. I veganized the recipe and added Nutritional Yeast (NY) to make it more nutritious. You can omit the NY if you'd like but then you'll need to reduce the liquid amount to 1/3 cup rather than 1/2 cup. I served the Dippy Dogs with French bakes sprinkled with NY and brussels sprouts. They loved it.

Dippy Dogs

 

One package Smart Dogs4 tablespoons oil (or more if needed)Yellow self-rising corn meal

1 1/2 teaspoons Egg Replacer mixed with 2 Tbls water

1/3 cup Nutritional Yeast

1/2 cup liquid of your choice (i.e. soy, rice, oat, almond milk, etc... or maybe even veg broth)

 

 

Mix together corn meal, Egg Replacer and water, Nutritional Yeast, and liquid.

 

Cut Smart Dogs in half and drop into cornbread meal mixture.

 

Spoon onto hot griddle (lightly oiled if not non-stick), brown on both sides.

 

Serve with ketchup or mustard.

Wow! This sounds fantastic. I can't wait to try it. The only question

I have is about the self-rising corn meal. I haven't heard of this.

Can you tell me what is in it so I can approximate the ingredients?

Variations we've tried on the recipe for veggie corn dogs:

 

Add finely minced onion to the batter for a hush puppy flavor.

Add cajun spice to the batter.

Slice the weenies into 1/2 " or thinner;

pour out the batter onto the griddle as you would cook a pancake;

place slices of weenie into the batter -- you can make faces or patterns;

turn over like cooking a pancake;

serve with mustard, tartar sauce or ketchup.

This recipe looks great and I'm definitely going to try it but I'm wondering how

much corn meal it calls for. Also, I've never seen self-rising corn meal; could

I add a teaspoon of baking powder to regular old corn meal, do you think?

Someone asked me how much self-rising cornmeal needed to be used in this

recipe. Sorry that I didn't include that. The recipe says that you can use

one package of Jiffy Cornbread mix OR yellow, self-rising cornmeal. It

doesn't give an actual amount for the cornmeal. I mixed all the ingredients

except the corn meal and then added the cornmeal until I got the consistency

I wanted (about the consistency of thick pancake batter). I have to go

grocery shopping today. I'll look for the Jiffy cornbread mix and find out

how much it has in the box as I assume that the amount of cornmeal will be

the same amount as the dry Jiffy mix.

 

As far as self rising yellow cornmeal goes, we have that particular product

here in the south (unbelievable, huh? <g>) I think adding baking powder to

the cornmeal or even just to the final product would work too. Actually, I

used non self-rising cornmeal straight and it worked fine. Maybe just use

heaping teaspoons of Egg Replacer (which I always do anyway) instead of

adding the baking powder?

I would use the yellow, self-rising cornmeal rather than the Jiffy Cornbread mix because the Jiffy Cornbread mix is made with Lard. My daughter had used it for years totally unaware of there being Lard in the ingredients because none of the other Jiffy products contain lard. She just took for granted that all of the Jiffy mixes did not have lard. It is good to check the ingredients and be safe and not sorry.

You're right, Donna. That's why I didn't put Jiffy mix in the original e-mail and why I don't use it. Ugh! There are other cornbread mixes out there that are vegan but as of yet, I haven't found one I like. It's both easier and cheaper to just use the cornmeal.

I would use the yellow, self-rising cornmeal rather than the Jiffy Cornbread mix because the Jiffy Cornbread mix is made with Lard. My daughter had used it for years totally unaware of there being Lard in the ingredients because none of the other Jiffy products contain lard. She just took for granted that all of the Jiffy mixes did not have lard. It is good to check the ingredients and be safe and not sorry.

Thanks for the recipe. I'd like to try it. What does the self-rising corn

meal have in it? Do you suppose I can just add that to regular corn meal?
