RECIPE: INDIAN VEGETABLE CROCKPOT SOUP

I made some indian vegetable soup (crockpot) for supper, but went for a drive and bought some israeli couscous salad at the local healthfood store for supper. i'll just save a portion of the soup for lunch tomorrow and freeze the rest. this was the recipe I put together for it, pulled from an online recipe with my own modifications.

 

INDIAN VEGETABLE CROCKPOT SOUP1 zucchini, chopped1 yellow squash, chopped1 small cauliflower, chopped1/2 to 1 lb new red potatoes, chopped1 15 oz. can garbanzo beans1 15 oz. can diced tomatoes4 oz. tempeh, cubed3 to 4 c. water or vegetable broth1 T. ground cumin1 T. garam masala1-1/2 t. ground coriander1 to 1-1/2 T. grated, fresh gingersea salt to tasteAdd cauliflower, zucchini, squash, and potatoes to crockpot first. Then add garbanzo beans & canned tomatoes (including juice). Add water.

Thanks, Megan (Hey, we've missed you!) -

 

Now really is the time to drag out the slow cookers and start stocking up on

soup for the cold weather. It's supposed to snow here (Montreal) today - or so

it said on the all-powerful weather network yesterday - I've not been brave

enough to look at the forecast today. So I am thinking souuuuuups!

 

Anyone else for SOUP? Let's do soup. You can make them, almost all of

them, fat-free if you like, and even so-called cream soups can be faked up

beautifully with milk instead or even, as I do, soymilk or soft tofu.

 

Soup is another great way, apart from juice, to get all those nutrients we need

for the winter all in one bowl. Do it right, and you'll even lose weight on it

LOL

 

How about if we make SOUP our dish of the month??? (All other recipes

gratefully received too, of course!) I'll even change our webpage (check in half

an hour, tops ;=))

Sounds so yummy - thanks! How long in yhe crock, and do I add the

tempeh at the beginning? I've never dobe tempeh in the crock...
