Guest guest Posted November 23, 2004 Report Share Posted November 23, 2004 Hi Folks, At 2:00 AM I woke up panicked because I had forgotten to make cookies for my kids' class today. While looking on the web for a really easy PB cookie recipe I found this one. From start to finish (including collecting the ingredients) it took 20 minutes to make these. I was skeptical about how they would taste but they really do taste pretty good. They're made with Bisquick (which is vegan), sugar, PB, and boiling water. If any of you try these, I hope you enjoy them. God's Peace, Gayle 1-2-3 Peanut Butter Cookies 1 cup peanut butter 1 cup sugar (granulated or packed light brown sugar) 1/4 cup shortening 1/2 cup boiling water 2 cups Bisquick Blend peanut butter, sugar, shortening, and water with an electric hand-held mixer until smooth. Stir in Bisquick. Drop small teaspoonfuls onto lightly greased baking sheets. Press with a fork which has been dipped in a little dry Bisquick or flour. Bake for 8 to 10 minutes at 400°. Until recently they added buttermilk, but no longer. Great news for all us vegans looking for quick meals!
