Hello All,

Our family has decided no more meat! Both for spiritual and health reasons, as well as ethical reasons for the living animals.

We have gone two weeks so far with no meat in our meals. So far the kids enjoy it, but they think we've gone bonkers, as daddy was a major meat man. (The kids miss McDonalds Happy Meals lol)

I'm surprised how easy it really is now. At this point I would like to go vegan completely, but starting off brand new to this lifestyle, vegetarian still seems a bit easier.

To help me out a wee bit, can anyone explain if y'all use "recipes" for vegan food, or do you just sit down at mealtime, and say lets eat our raw carrots n' celery.

Do vegans use sauces on their veggies/fruit, or do you eat your raw produce plain?

Do you eat it raw or cooked? Ugghh you can see my confusion now!!

Can anyone explain vegan eating lifestyle in simple terms, maybe a few good recipes(?) or some good books to help me get started?

H~E~E~E~L~L~P LOL.

Peace be with you all, and I look forward to learnin' from you soon!

Hello Sue,

As a vegan, I have meals that consist of Mashed

potatoes (I use coconut milk instead of milk) and

gravey, Beans and rice, steamed veggies with tahinni

sauce. Sauces and gravy's are allowed and I encourage

them as it makes for an easier transition to the vegan

life style. There are also vegan bocca burgers and at

many asian markets you can buy vegan mock ham and

chicken. This might make it easier for the kids.

For Thanksgiving we had Mashed potatoes, gravey, yams,

mock ham ( totally vegan) soy dream for dessert. (soy

ice cream)

You are only limited by your imagination.

Have fun,

Ed Valentine

Maybe this is a good time of year for the transition also because you can

have lots of soups and stews with good home made bread. In those,

especially, you won't miss that there isn't a piece of meat taking up a

major portion of the dish.

Maybe for the next few weeks, at least, you can ban carrots and celery from

your diet. Then, when someone asks what you eat beside carrots or celery,

you can say, " Hum, hadn't thought to have those. "

The best!

My goodness, the only time I think to eat raw veggies is as a relish

tray. LOL! the cookbooks " How it Vegan " and " The Garden of Vegan "

have some wonderful recipes. " The Vegetarian Meat and Potatoes

Cookbook " has some really hardy meals in it as well.

Maybe you can think of your favorite meaty recipes and convert them.

ie. for hamburgers, use veggie burgers. They are simple to make, and

you have more variety than you do with ground beef. Maybe Chicken

noodle soup, you could make with vegan chicklettes, rather than real

chicken. The cookbooks " How it all vegan " and " Garden of Vegan "

really give some good recipes for making vegan butter, sour cream,

etc. with tofu and other sources.

Let's get seasonal, a bit, I am sure we are all doing our share of

baking, all one has to do to make a vegan loaf of banana bread, is

use soy milk, soy butter, and unrefined sugars. For an example.

Have fun, and good luck.

(BTW, I am not new, but haven't been capable of coming around for a

long while, so Hi again.)

Great suggestions. Books are the best way to start.

Another good place to look for recipes is

http://www.vegweb.com

and

http://www.vegan-food.net

Some vegan meals I've had in the last week or two

were:

Fajitas (veggies sauted in spices served on tortillas

with soy cheese, salsa and guacamole)

Chilli (beans, tvp, tomatoes, veg and spices)

Bangers and mash (veggie sausages, mashed potatoes and

peas with onion gravy)

Split pea soup (split peas, veg stock, spices, fake

bacon bits garnish)

Madras Curry (veg, tvp chunks, curry paste)

etc etc
