RECIPE (OR IDEAS) WANTED

Okay, I splurged the other day and had a pear salad with bleu cheese in it from a local salad bar. One of the few times recently that i had dairy. I got to thinking about vegan substitutes for blue cheese and finally dawned on me that some sort of umeboshi vinegar marinade might do the trick with cubes of tofu.

 

Does anyone know where i can find some good umeboshi marinades I could use?
