vegan lunches

Check the archives, and also try Googling it. The subject comes up a lot. Some

of us are really boring and eat hummus and pita pb & j or salads a lot but there

are many creative people on this list. I eat garlic hummus with a whole wheat

middle eastern flatbread called lavash & bring some seasonal fruit, e.g., apple

in the fall, blood oranges right now, bananas in spring when there is nothing

else, and berries and local summer fruits in summer. I also bring vegan peanut

butter chocolate chip cookies, sssshhhhhhhhhhhh!

I usually do a lot of cooking on weekend and when I do

I make enough to freeze parts of it for lunches for

the week that works out really well. Soups,

spaghetti, vegan meats with mashed potatoes & gravey

or dressing. (all vegan) Then of course there are a

lot of vegan snacks on the market, however in some

areas they may be a little harder to find. Cookies,

cakes, chips, etc.

 

For sandwiches, sometimes I'll take vegan hot dogs or

vegan ham (available at my local asian market or

online) and run it through a food processer, add some

soy mayonaise, relish and seasoning and make a

sandwich spread. These are good for hiking, camping,

etc.

 

Hope this gives you some ideas.

It does. I am going to have to work up a notebook with ideas because

I have a hard time keeping all this in my head. Need to start stocking

up with items so that I won't be short in the kitchen when I need to

fix meals and lunches. It is a whole change in lifestyle food habits.

For lunches I usually have leftover soup or stew with

a tall glass of soymilk, along with a salad and some

cooked veggies. I do what Ed does and make a bunch of

food and then eat leftovers. It's always good to have

canned soups on hand, frozen veggie burgers or

" chicken " patties, frozen buns, frozen veggies and

fruits for quick healthy lunches that don't require

much time. And vegetarian baked beans with cut up

veggie dogs makess a quick, tasty lunch entree.

I do a weekly menu, I work on it on Saturdays, and go by it. On Sundays I do my shopping for the week. I put breakfast, dinner and supper in it, along with snacks even. Sunday, I also do any baking I need to do, like for snacks, I make fig bars a lot, or date squares. Those usually need baking. Also good to have on hand, in my house are the baby carrots and fresh brocoli. Those are easy to pack in a bag lunch too. However, I am sure I wasn't the first to tell you this, LOL! I personally need the pick me up in the afternoons of caffene, so I usually have tea or something like that. cworden123 <cworden wrote:
