Is there anything in particular you want to know how to cook without dairy or eggs? I have had good results with using soy milk or rice milk instead of cow's milk in most recipes, and with using egg substitute instead of eggs in baked goods. Guest guest Posted January 17, 2005 Report Share Posted January 17, 2005 Milk was a very hard thing for me to quit. Nothing else tasted the same, and I drank lots and lots of cow's milk. In my house we went through a gallon a day, we still do, just now its soy. I bought all kinds of soy milk too, and it was just gross. I had to go from whole milk, down to skim milk, and then drink it half and half with the soy, gradually adding soy as I could, until I was drinking all soy milk. Cheese was another difficult thing to live w/o. I still miss it a lot. Nothing compares to it, but I have found better tasting alternatives, that I can make myself. The Uncheese cookbook as been of great assistance. However, my favorite meal, as a meateater, I can't veganize it. It was upside down cheesy beef cornbread. I have tried, but it doesn't taste the same. But I have found some new favorites, and they are MUCH healthier!!! So that makes up for that one meal. MelanieSunshine <Noodlings wrote: Hello! I have always been a BIG milk drinker. I don't drink soda pop, coffee, tea or alcohol; it's always been milk, juice, or water or nothing! When I bake, I've always used real butter (not margarine - I'd rather deal w the health concerns of something 'natural' rather than man-made) and eggs. I'm not quite (lacto/ovo) vegetarian, but I eat *very* little meat, and what I do eat is organic. I'm wondering about becoming vegan more for health concerns; worrying specifically about BSE or " Mad Cow Disease " being in even organic cows and not just their meat, but their milk and something similar happening to chickens ( & their eggs). On the other hand, I didn't want to become purely vegetarian w meat/cheese/dairy substitutes b/c of the dependence on soy. From what I've read, a diet heavily weighted in soy & soy products can have a detrimental effect on one's health, especially for a woman. I have my own business which takes up a LOT of time and I also don't have a proper kitchen, so whatever I eat has to be easy! Right now I eat a lot of toasted peanut butter & banana sandwiches. I guess I'm looking for ideas and inspiration to keep me going! Thank you for your help! I look forward to being here! I make milk (for cooking and cereals and drinking) out of cashews or rice, not soy. It's pretty easy, but you need a blender or food processor or food mill. Commercial rice milk is also pretty good. Also, I have a good nacho sauce recipe that's based on nutritional yeast, not soy.
