Usually i make it using the instant mix that i find in the bulk bins at the healthfood store. He enjoys mixing it up and adding garlic and lemon juice to it. i like to add garlic, lemon and oil-packed sun- dried tomatoes minced up. But the good thing is it's so personal - you can make it taste however you want: more lemon, less lemon, more tahini, less tahini, even different beans if you don't like garbanzos. Northern white beans work very well (hubby doesn't like g'zo beans but thought the white beans were ok - he thinks everything that isn't spaghetti is just ok ) Just remember to keep track of your different efforts so when you come up with one you really like you can do it again. Really, I *must* have a mental block, b/c I didn't think of this! I've always thought of hummus as absolutely having certain ingredients & one can't possibly deviate from them. Not that idea stops me w any other recipe! My friends all say I'm a good news/bad news cook - the good news is that I'm a wonderful cook (in their opinion, not mine!), but the bad news is they will never have the same dish again. I'm very much a " little of this, little of that, oh that looks good too " kind of chef! I DO have a can of chickpeas in the cupboard that I will try to use - but it's nice to have other options! I think because there's no tahini in it (which is why it's not hummus): Garbanzo spread 1 onion, chopped A little oil 1 bunch parsley, chopped juice of 1 lemon 2 cans of garbanzos and the juice from one of the cans Saute the onion in oil until it's soft, then throw in the parsley at the last minute just to wilt it. Nutty Hummus Dip (but I have spread it on pita bread w/ Jelly or something.) 3/4 cup cooked chickpeas 1/4 cup peanut butter or nutbutter 1/4 cup apple juice 1/2 tsp. cinnamon In blender or food processor, blend together the chickpeas, nutbutter, apple juice and cinnomon until smooth. Spoon into medium bowl, and top with a layer of jam or fruit spread.
