I always keep various nuts and seeds around to snack on, which are a good source of protein. I've never learned to eat nuts & seeds! My mother was/is a really picky eater & I didn't get exposed to much! She's impressed to pieces b/c I eat apples & tomatoes and " all those awful things " ! It's only been in the past year or so I've learned to eat cucumbers and am kicking myself for not trying them sooner. :/ > If you don't have much cooking equipment, you might want to experiment with canned beans. *sigh* I really DO like to cook and it kills me to buy canned beans. Partly for the expense, partly for the waste (disposing of the can), but mostly b/c I really like my own cooking! I know money needs to go for other things, but I am SO tempted to 'do up' a kitchen! But I do buy canned kidney & brown (baked) beans. Baked beans I can eat right out of the can or on brown/multi grain toast, and the kidney beans I use in chili or on rice. (Do I have to explain that chili is vegetarian, or does everyone just assume it is and/or politely ignore it? ) My mother also makes green beans with sauteed onions & mushrooms mixed in; especially good if they are 'French style' (julienned) green beans. It's something a little different and I love it b/c I love anything w onions & mushrooms! And thinking of snack food - they are starting to disappear now, but around Christmas, our stores carry Mandarin oranges, little oranges that fit in the palm of your hand, seedless, with a very easy to peel, thin skin. They come in boxes of 4-5 dozen & I usually go through 3 or four boxes every December. I can go through half a dozen of them at a time w/o even thinking about it! Signing off with a toasted pb & banana sandwich & one of those little oranges! His in JOY (: Sunshine
